Process of picking the leaves

 

Kenya has very high standards of picking the tea buds. Farmers hand picks only the finest leaf to ensure a high quality cup of Kenyan black tea. Unlike other teas which sometimes are harvested by using machines, all Kenyan teas are hand picked so you can be sure you are getting top quality tea.

 

What is Ketepa Tea?

 

Ketepa is an acronym for Kenya Tea Packers, a limited liability company based out of Kericho, Kenya.  There are not many companies in the United States who import Ketepa Tea, however Peak Coffee & Tea is one of few privileged companies who import Ketepa Teas from Ketepa Tea Packers directly. Ketepa Tea Packers produce a wide variety of loose leaf and bagged teas, and they're most known for their high quality black tea.

Ketepa sources all of their teas from local farmers in Kenya guaranteeing high quality tea leaves and local sustainability. I was surprised to find that many people have never heard of Ketepa teas despite their excellent quality and prices.

 

How is Ketepa Tea produced?

 

One characteristic you will notice is the tea leave's unique shape. After the leaves are picked by hand and brought to the warehouse, they undergo a process called Crush, Tear, and Curl (CTR Method). This process exposes the tea leaves to atmospheric oxygen which allows the secretion of enzymes. As enzymes work on the leave's cells, the tea begins the process of oxidation furthering the leaves development and preparing them for fermentation.

 

After fermentation and drying of the leaves, Ketepa carefully packages and exports their teas worldwide. However, only 10% of their products are exported. We have an exclusive relationship with Ketepa Tea Packers which allow them to sell Ketepa Teas at a great price and keep large quantities in-stock.

 

What is the flavor like of Ketepa Tea?

 

You'll notice that Ketepa Pride Tea bags produce a coppery reddish color and distinct malty flavor. Like most black tea, Ketepa Tea has a smooth flavor with a little to know aftertaste which is very pleasant. While drinking tea is a very personal experience, I enjoy my Ketepa Tea with a splash of low-fat or whole milk.

How to Brew

 

Steep for 3-5 minutes @190-209 degrees


Brew Hot Tea


Bring freshly drawn cold water to a rolling boil. Place 1 tsp of tea for each cup into tea pot. Add boiling water. Cover and let steep for 3-7 minutes. Add milk and sugar to taste. Acceptable to consume 'straight up'

 

Brew Iced Tea ( 1qr/ltr)

 

Place 6 tsp of tea in a heat resistant pitcher. Add 1/14 cups freshly boiled water. Steep 5min. fill the serving pitcher 1/4 way with ice water. Add steeped tea and fill with ice water. Garnish to sweeten. (note: top quality tea may cloud when iced ( its ok) due to their naturally high flavonoid polyphenols levels) Enjoy!

I became a fan of Kenya tea with milk when I was a Peace Corps volunteer in the 1970s. Over the years my Kenyan friend has brought me this very tea on the few occasions she has been to the States. Now I can purchase it any time I want! It is full bodied, smooth, energizing, and brings back wonderful memories of tea time in a country I have loved. It also makes great chai!
